By noon I started thinking about dinner and just about then Mr. F. got home from work. Aahhhh. Then I remembered the boneless pork shoulder defrosted in the fridge. I meant to bake it on Saturday but didn't.
I learned to enjoy and make Pernil when I lived in Puerto Rico. Ahhh, fond memories. Usually the pork shoulder is baked. But as I said before this was a lazy day. So out came the crock pot.
Here is how I made it.
1 Tbs of dried oregano, 1 Tbs salt and enough olive oil to make a paste.
To complete this lazy day dinner, I warmed up leftover rice. Mixed in some fresh broccoli chopped and steamed. Drizzled with olive oil and sprinkled some red pepper flakes. Done.
NOTE: You will have a nice gravy in the crock pot. Sorry, we dived right in and I forgot pics. Woops!
