Bars ingredient list:
1 C flour
1/2 C light brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/8 tsp cloves
1/4 tsp ginger
1 tsp cinnamon
15 oz can pumpkin puree
1/2 C vegetable oil (I went with 1/2 C butter)
1 tsp vanilla
(I did not have vanilla or ground cloves RATS! So I subbed 1 tsp nutmeg)
Preheat oven to 350 degrees
In large bowl combine flour and brown sugar. Mix well.
Bake 30-35 minutes. ( In the 8 x 11 dish it took 35 min. )
Cool well before frosting.
Frosting ingredient list:
4 oz cream cheese
3 T butter
1 tsp milk
1/2 tsp vanilla
1 C powdered sugar (sifted)
Combine the softened cream cheese and butter.
Sift powdered sugar into cream cheese and mix together.
Mix in vanilla and milk until smooth.
Note: I did not make this frosting since I still had icing left over from last week's pumpkin cookies. But I am sure the frosting is as good as the bars are.
Spread frosting on cooled bars. Cut into bite size pieces. Or a little bigger if you like.
