Baked Potatoes & Asparagus
This is a quick and easy side dish. Quick enough for weekdays. Let's make it.
You'll need potatoes and asparagus of course and extra virgin olive oil, salt, pepper, minced garlic and fresh rosemary. I love heirloom potatoes so that's what I am using. They taste wonderful and make for a very colorful plate. Preheat oven to 375 degrees.
Wash potatoes and dry with paper towels then quarter them. My fresh rosemary came from outside in my yard so I had to wash it too. ;)
I went out in the rain to cut a few sprigs of rosemary. No big deal. It's right outside my door.
In rectangular baking dish, toss potatoes in the olive oil, salt & pepper and garlic. Bake for 30 minutes or until tender.
Prepare asparagus by washing, drying with paper towels and cutting off the woody bottoms. Toss in extra virgin olive oil, salt & pepper.
After potatoes have baked for 15 minutes, add asparagus to baking dish and bake another 15 minutes until both are tender and potatoes browned.
