I love easy recipes and this one fits the bill. You might already have everything you need.
Cookie ingredient list:
2 1/2 c flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 1/2 c white sugar
1/2 c soft butter
1 c pumpkin puree
1 tsp vanilla (I love vanilla)
Preheat oven to 350 degrees.
1. Combine all dry ingredients and mix well. ( Enjoy the yummy aroma of these spices. Mmmm.)
Note: My mixer's lowest setting is not exactly "low" so I mixed in the dry ingredients a little at a time, folding and mixing by hand. I hate the unavoidable flour cloud that results from using the mixer.
Once it's all well combined with no flour streaks...
3. Drop cookies on a cookie sheet by the measuring tablespoon. Bake for 15
minutes. Mine were done baking at exactly 15 minutes.
Icing Ingredient List:
2 c confectioners sugar
3 T milk (a bit more if it's too stiff)
1 T melted butter
1 1/2 tsp vanilla
Combine all ingredients and mix together.
Note: Again I did this by hand to avoid the cloudy mess. It was easy to mix.
Once the cookies are completely cool, use a spatula to spread icing on.
